A study co-sponsored by the U.S. Department of Agriculture (USDA) and the National Food Processors Association (NFPA) compared six vegetables in home-cooked fresh, warmed canned, and prepared frozen forms. The study found only slight differences in vitamins, minerals, protein, carbohydrates and fats following preparation under recommended cooking procedures.
