Fresh, Frozen, or Canned -- Which is Best?

A study co-sponsored by the U.S. Department of Agriculture

(USDA) and the National Food Processors Association (NFPA)

compared six vegetables in home-cooked fresh, warmed canned,

and prepared frozen forms.

The study found only slight differences in vitamins, minerals,

protein, carbohydrates and fats following preparation under

recommended cooking procedures. Vegetables in cans also

contain fiber similar to fresh and frozen vegetables.
