Guest guest Posted March 8, 2004 Report Share Posted March 8, 2004 There was an article (I believe in the New York Times) on the low carb craze and the effect on the agricultural industry. And, what stuck in my mind was the nutritional ignorance of so many people. Something like 60% were clueless when it came to understanding carbs...which suggests to me that there is a huge gap of nutritional knowledge out there. But, people CAN understand: Eat everything you want and still lose weight. Nutrition (as this list demonstrates) is a complex subject...and for many people beyond comprehension. I think that is why so many fall into quick and easy fix traps. In addition, our culture makes food..and especially unhealthy food..abundantly available. So, there is little cultural constraint or structure which reinforces healthy eating. I recall traveling in Europe noticing how few people were overweight. But, reading further, it occured to me that money is tighter there, the culture (particularly in Western Europe) encourages 3 meals a day with no snacking. Food is savored and not bolted.
