The other research I posted pointed out that the lower the saturates in the diet the longer the lifespan due to the lower oxidation rate of the mammal eating them. What you said below is exactly the opposite of what Dr. Fife says about oxidation. That it is good that these fats don't oxidize. I am very confused. Conversely, more unsaturated oils like for example flax seed oil undergo faster oxidation, which results in free radical cascades in the body, which shorten lifespan. The lower the dietary UNsaturates the higher the mammals lifespan, is of course what the research says (deficiencies taken care of). This research and others is on my website on the coconut oil page, which also contains that peroxidation index, AKA the oil analysis worksheet. So if VCO doesn't oxidise very fast, why isn't it more healthy for us?
