UHT coconut milk safe?

Hi,

I would like to know whether UHT coconut milk has any trans fats and does it

have all the beneficial qualities as non-UHT coconut milk?

The coconut milk available in the local supermarkets all seem to be the UHT

type.

Does anyone know whether the high temperature (135-145 degrees Celcius) will

change the good fats in coconut milk into harmful fats/trans fats?

Would be grateful for a reply.

Hi J

Unfortunately most coconut milk that is sold in flexible packaging

(Tetrapack,Tetrabrick,etc is UHT treated. I believe, but not sure, that the

canned coconut milk has not been subjected to UHT temperatures. I use both

periodically but prefer the fresh young coconuts, barbecue (smoked) coconuts and

even the mature coconuts. All are readily available at reasonable prices here in

Hong Kong

The high temperature will not damage the fats in coconut oil. No trans fats

formed.

However many of the beneficial enzymes may be killed, the most sensitive are

affected at 117 deg F

I looked for coconut milk and found SUGAR very prominent on the label.

Also found SUGAR in salt. Coconut to put on top of a cake in a plastic

bag for baking and SUGAR is listed. What gives?

Yes , the common desiccated coconut that has been around for years has been

soaked is a saturated sugar solution and dried at reasonably high temperature.

In the past the high sugar content (of many products) was used as a form of

preservative and of course to promote your sweet tooth.

Now at most health food stores and at some on line shops you can get shredded

pure coconut without sugar or anything.
