Thus VitaMix is almost like juicing, while retaining the fiber. This ultra-fine blending raises a low glycemic food to a high glycemic food. Both the glycemic index and the glycemic load are raised when food is processed, whipped, and ultra-fine blended this way. A VitaMix creation of high glycemic index food is like the energy burst of a sugary food, and a high glycemic load is like eating a whole bunch of sugar at one time. So a VitaMix coverts a complex carbohydrate into something more like a simple carbohydrate, just the reverse of what is recommended for those trying to satiate and delay hunger by eating complex carbs. Some seeds contain stuff that we normally don't chew fine enough to get.
