Thank you for posting Michele! Right now I'm hungry & this sounds very

delicious! :-) I see that Benefiber is partially hydrogenized guar gum

.... I am trying to determine if there is there any appreciable

difference between this ingredient, and regular guar gum (that I

presently use) ... Perhaps the hydrogenized version mixes easier ... but

with a blender, it might not matter. I'm happy that I have on hand one

of those squeeze bottles.

Benefiber and Guar are not the same thing. Benefiber is unique because it

does not thicken and guar gum does. But, because gums are used to improve

consistancy of foods and give them a slippery or creamy texture it seems

they would be a desireable ingredient for a salad dressing. Unfortunelatly,

I have never experimented with it to find out and have no idea how much to

use. If you add too much you could end up with pumpkin pudding or even

pumpkin rubber (maybe Waren could give some helpful insite here). If you

decide to try adding regular guar gum, add just a little at a time and wait

for it to thicken before adding more...let us know how it turns out.

Now I am off to the kitchen to experiment on new doughball treat recipe for

Gillie...I haven't had much success with this one yet...but i'm getting

closer. :o)

Interesting: Benefiber is partially hydrolyzed guar.

Beware of regular guar's thickening power- it is quite potent! A little goes

a long way. I've found this to be at least equally true of xanthan gum.

For the local get together, I am bringing both versions of the dressing listed

below. IMO the taste of both versions were AWESOME. Very scrumptious.

I've calculated the low fat version at 8cal per Tbs., and the regular version

has 20 cal per Tbs. I worry that these are too scrumptious. Michele, hope

you & doggy are doing well.
