Guest guest
Thank you for posting Michele! Right now I'm hungry & this sounds very delicious! :-) I see that Benefiber is partially hydrogenized guar gum .... I am trying to determine if there is there any appreciable difference between this ingredient, and regular guar gum (that I presently use) ... Perhaps the hydrogenized version mixes easier ... but with a blender, it might not matter. I'm happy that I have on hand one of those squeeze bottles. http://www.allegromedical.com/dietary_supplements/adult_nutrition/novartis_sando\ z/resource_benefiber_7_2_oz_canisters_powder.P192061 or http://snipurl.com/5iy9 Thanks again & kiss the pooch for me. :-) Michele Pitonyak wrote: >There are two versions of this recipe. The first one is the origional recipe I created about a year ago. Then I came up with the second as a low fat version...but I usually make the first one because I like it better. Michele & Gillie Pumpkin Dressing Ingredients: 1/2 cup Pumpkin (solid pack) 1/4 cup Cider Vinegar 1/4 cup Olive Oil 3/4 cup Water 1 tsp Cinnamon 1/2 tsp Paprika 1/4 tsp Ginger 4 packets Splenda (or to taste) 2 HEAPING teaspoons Benefiber (Optional...but it keeps the solid & liquids from seperating.) Put all ingredients in blender and blend until all ingredients well combined. I put dressing into a plastic salad dressing bottle that I saved and washed out...the kind with the squeeze top/shaker top. These is a thick dressing and squeeze type bottles work best. Pumpkin Dressing (Low fat version) Ingredients: 1 cup Water 1/3 cup Cider Vinegar 1 Tbsp. Olive Oil 1 1/2 tsp Cinnamon 1 tsp Paprika 1/2 tsp Ginger 6 packets Splends (or to taste) 3 Heaping teaspoons Benefiber (optional...improves texture) Blend all ingredients in blender. Put dressing in recycled squeeze bottle.
Guest guest
Benefiber and Guar are not the same thing. Benefiber is unique because it does not thicken and guar gum does. But, because gums are used to improve consistancy of foods and give them a slippery or creamy texture it seems they would be a desireable ingredient for a salad dressing. Unfortunelatly, I have never experimented with it to find out and have no idea how much to use. If you add too much you could end up with pumpkin pudding or even pumpkin rubber (maybe Waren could give some helpful insite here). If you decide to try adding regular guar gum, add just a little at a time and wait for it to thicken before adding more...let us know how it turns out. Michele & Gillie Now I am off to the kitchen to experiment on new doughball treat recipe for Gillie...I haven't had much success with this one yet...but i'm getting closer. ) ----- Original Message ----- Message: 15 Date: Mon, 05 Apr 2004 20:51:54 -0400 From: apricot85 <apricot85@...> Subject: Re: Pumpkin Dressing Recipe Thank you for posting Michele! Guest guest
Interesting: Benefiber is partially hydrolyzed guar. Beware of regular guar's thickening power- it is quite potent! A little goes a long way. I've found this to be at least equally true of xanthan gum. >From: " Michele Pitonyak " <map1@...> >Reply- >< > >CC: <apricot85@...> >Subject: Re: [ ] Pumpkin Dressing Recipe >Date: Tue, 6 Apr 2004 13:18:39 -0400 > >Benefiber and Guar are not the same thing. Guest guest
For the local get together, I am bringing both versions of the dressing listed below. IMO the taste of both versions were AWESOME. Very scrumptious. I've calculated the low fat version at 8cal per Tbs., and the regular version has 20 cal per Tbs. I worry that these are too scrumptious. Michele, hope you & doggy are doing well. Olive Oil 1 1/2 tsp Cinnamon 1 tsp Paprika 1/2 tsp Ginger 6 packets Splenda (or to taste) 3 Heaping teaspoons Benefiber (optional...improves texture) Blend all ingredients in blender. Put dressing in recycled squeeze bottle
