Then I came up with the second as a low fat version...but I usually make the first one because I like it better. Michele & Gillie Pumpkin Dressing Ingredients: 1/2 cup Pumpkin (solid pack) 1/4 cup Cider Vinegar 1/4 cup Olive Oil 3/4 cup Water 1 tsp Cinnamon 1/2 tsp Paprika 1/4 tsp Ginger 4 packets Splenda (or to taste) 2 HEAPING teaspoons Benefiber (Optional...but it keeps the solid & liquids from seperating.) Put all ingredients in blender and blend until all ingredients well combined. I put dressing into a plastic salad dressing bottle that I saved and washed out...the kind with the squeeze top/shaker top. These is a thick dressing and squeeze type bottles work best. Pumpkin Dressing (Low fat version) Ingredients: 1 cup Water 1/3 cup Cider Vinegar 1 Tbsp. Olive Oil 1 1/2 tsp Cinnamon 1 tsp Paprika 1/2 tsp Ginger 6 packets Splends (or to taste) 3 Heaping teaspoons Benefiber (optional...improves texture) Blend all ingredients in blender.
