Guest guest Posted May 8, 2004 Report Share Posted May 8, 2004 A fresh herbal marinade from Sicily to use for fish kabobs before grilling or broiling- or be creative and use as you see fit to fit your diet- raw/ cooked etc. Use fresh organic herbs from the garden ;-) 1 clove garlic 1 tablespoon chopped parsley 1 1/2 tsp chopped oregano 1 teaspoon chopped rosemary good quality sea salt 3/4 cup virgin olive oil slightly warmed 3 tablespoons hot water 4 tablespoons lemon juice freshly ground black pepper Put garlic, herbs, and dash of salt in a mortar or bowl and pound into a paste with a pestle or end of wooden spoon. Pour the oil into a warm bowl and using a fork, slowly pour in the hot water followed by the lemon juice, whisking till emulsified. Add the garlic and herb mixture and black pepper to taste. Put the bowl over a pan of hot water and warm for 5 minutes, whisking occasionally. Allow to cool before using. Recipe from The New Herb Bible Whole Life Essentials.
