Twice as much as even broccoli, which is near the top of most lists. In 1700 calories of endive there is 28,000% of the RDA for vitamin K! (I hope it isn't toxic!) And it has about half as much oxalic acid as broccoli too. My bet is that kale also contains a lot of vitamin K, but no one has happened to submit a number for it to the USDA database, so it shows up as zero. I think I will modify my soup to include some endive among its green vegetables. Pretty soon I am going to have to issue a revised version of that soup to take account of what I have learnt here since I posted it. Thanks guys! So it isn't the absence of data at the USDA for the vitamin K content of kale, it is a failure of Fitday to pick up that data. It looks like kale has a lot more vitamin K per calorie than even endive!
