The shell surrounding the green cashew nut kernel contains a very acrid and

irritant oil. The nut itself contains poisonous oils which need to be

evaporated through roasting before the nut can safely be eaten.

Francesca,

Cashews are my favorite nut also. I have to be careful with them,

though, because I can go through a whole jar mindlessly, so that's

one food that gets measured and the rest put away immediately

(preferably in a locked container, lol).

Thanks for the information on why cashews are never in the shell. I

have often wondered that myself. I've only seen them salted or

lightly salted, but never just roasted. I think I'll start going to

Whole Foods in my area and buying my food there.

Regarding cashews ......... I have a recipe that lists what it

calls " raw cashews " . I found them in a store, shell already removed,

used them and survived the experience. My guess, based on the

previous note regarding toxicity, is that they are processed to

remove the problem component without heat. The raw item was quite

close to white in colour, with no sign any oil had been anywhere near

it. fwiw.
