I have to be careful with them, though, because I can go through a whole jar mindlessly, so that's one food that gets measured and the rest put away immediately (preferably in a locked container, lol). Thanks for the information on why cashews are never in the shell. I have often wondered that myself. I've only seen them salted or lightly salted, but never just roasted. I found them in a store, shell already removed, used them and survived the experience. My guess, based on the previous note regarding toxicity, is that they are processed to remove the problem component without heat.
