Guest guest Posted March 3, 2006 Report Share Posted March 3, 2006 I use only cast iron to cook with and the only oil is use is coconut oil. My experience has been that things will stick to the skillet if you are only using CO. I use a combination of a little butter and CO and have no problems. It doesn’t seem to take much butter to make it non stick. Also, since I only wipe the skill out and never use soap, I find that now I don't always have to add butter to keep things from sticking. I brought 7 pieces of cask iron with me in my luggage when we moved to the Republic of Panama last month. Tragically my largest 13 " skillet was damaged in baggage handling. Part of the lip broke off as if someone had taken a bite out of the side. The good new is while I can't use it for sauces I can still use it for frying/grilling. I'm telling you this b/c as a user of cast iron I know you will sympathize with me <grin>. With all your information, I got brave and used coconut oil with a little bit of butter in the pan. The first couple of times it smoked until I learned how to use it. Now I put just a little coconut oil in the pan, followed by a smaller amount of butter and once it begins melting I use a brush and brush it around the pan and it works great!
