" ==== Fermenatation always has the risk of contamination by unknown or organisms. For example, aflatoxin, a toxin from a naturally occurring mold, is a carcinogen proven to cause cancer in humans. Ochratoxin A is a mycotoxin produced by the fungus Aspergillus ochraceous that has been known to cause kidney damage in animals and is a suspected carcinogen. Cancer caused by fermented foods may not be due to the components of the food, but to the by-products produced by the fermenting organisms. A.
