I make roasted tomatoes that are great to spark up a salad, add

depth to sauces, or just eat plain.

12 plum tomatoes - quartered lengthwise

1 tbs olive oil

2 tsp dried basil

2 tsp dried oregano

salt

pepper

Toss it all together. Spread in a single layer in two 9x13 " glass

pans. Bake at 300 for 1 hour. Reduce heat and bake at 250 for

another 4-6 hours till shriveled and no longer juicy, but not

totally dried out.

4 pieces - approximately 25 calories

7 hours in the oven, 12 tomatoes !! You must be joking?
