There is a traditional yogurt sauce called " Cacik " in Turkey,

or " Tzatziki " in Greece that is served with kebabs, roast chicken, or

lamb, but can be used as a salad or vegetable topping. The

traditional recipe uses olive oil. You can reduce it or omit it to

cut down on calories.

Ingredients

2 tablespoons olive oil

1 teaspoon wine vinegar

1 clove of garlic, crushed

6 oz natural yogurt

1/2 cucumber, diced finely

3-4 fresh mint leaves, chopped finely

salt

Preparation

Lightly beat the oil, vinegar and garlic with a fork in a bowl; add

the yogurt and beat until smooth. Add the cucumber, salt and the

chopped mint and mix well. Serve chilled.
