As requested, here's the recipe for

Chicken with Spinach Avgolemono

1 T. olive oil

3-4 chicken breasts

1 c. chopped onions

1 T crushed garlic

1 c. water

salt, pepper, and dill to taste

1 lb fresh spinach

Avgolemono sauce

3 eggs

2 T flour

juice of 2 fresh lemons (6 T)

I cut the chicken into large pieces to make serving easier. Lightly

brown chicken, onions and garlic in olive oil in a nonstick pan (one

with a lid). Add water, salt and pepper. Bring to a boil, cover and

simmer for 30 minutes. Cut or tear spinach into small pieces. Throw

it into the pot and cook for an additional 10-15 minutes. Remove from

heat.

Prepare the avgolemono sauce

Beat eggs until frothy. Add flour and lemon juice, beating well. I do

this in the mixer. Slowly add some hot liquid from the pot until

you've added about 1/2 a cup. Now, pour the sauce back into the pot,

shaking or swirling the pot gently to mix. Serve immediately (though

this reheats okay).

100 g. of this has 85 calories. This is high protein and high in

Vitamin A and most B vitamins and minerals. It's main downside is

that it's fairly high cholesterol - 63 mg per 100 g portion. 1/4 of

this recipe is about 400 g - so 340 calories. This amount would have

44 g of protein, and about 1/2 the RDA on average of B vitamins, more

than 100% the RDA of A.
