Guest guest Posted July 14, 2004 Report Share Posted July 14, 2004 HORSERADISH COD Serves 4 1 1/3 lbs cod fillets 3 tbs grated horseradish 4 tomatoes ½ lemon 1/3 cup butter or margarine salt freshly ground white pepper Preheat the oven to 525F. Scald, skin and slice the tomatoes (so the recipe says, but I normally just slice the tomatoes without scalding and skinning first - you can decide for yourselves). Grate the horseradish - in Sweden we can buy it already grated in small plastic jars. Flavor the fish with salt and pepper. Grease a piece of aluminum foil, large enough to " house " the fish, and put the fish on it. Sprinkle with horseradish and squeeze lemon juice on top. Cover with sliced tomatoes and flavor lightly with salt and pepper. Dab remaining fat on top and fold the package well together. Put in the oven and lower the heat to 475F. Bake for 18 minutes.
