Some people here who believe they are on a low carbohydrate diet cannot possibly be, given all the high carbohydrate vegetables they say they consume. But I do believe they are on a low starch diet. And I suspect that a low starch diet may very well be beneficial. After all, essentially the only difference between Mattson's CR mice (which lived 40% longer) and the controls was the near total elimination of starch. I have looked for, and have not been able to find, a breakdown of the different types of carbohydrates, similar to the detailed breakdowns one can find many places for the different types of fats, for example.
