On the subject of recipes, does anyone have a great

recipe for cooked or raw spinach/other greens? I'm

trying to find something my 11 year old will like:-)

My mother used to make a spinach dish that is still my favorite:

Ingredients:

1 small onion

1 TB olive oil

2 hard-boiled eggs

a bag of raw spinach (about the size of a 4-quart pot)

Italian salad dressing.

Wash the spinach thoroughly 3 times because it can have a lot of dirt.

Chop the onion and saute it in olive oil in a 4-quart pot.

Add the spinach and cover the pot until the spinach shrivels to a

small portion of its original size. Stir occasionally. Remove from

heat.

Sprinkle Italian salad dressing to taste and mix.

Transfer the spinach to a serving dish and decorate with slices of

hard boiled eggs. Enjoy!

You can customize the calories in this dish by controlling the amount

of oil for sauteing and by using vinegar and sprinkling garlic powder,

oregano, savory, salt, and pepper instead of using Italian salad

dressing.

Preparation time: about 15 minutes.

I cant say how an 11 year old would appreciate this as I havent

found either my children or grandchildren to be drawn to

spinach. I like to serve it with Blue/Roquefort chunks of cheese

whether in a salad or cooked. If cooking make sure not to cook

more than a minute or so and to immediately rinse in cold water

- to retain the bright color. I sprinkle with lemon juice and then

the chunks of cheese. Now I'm on this diet the chunks will be

minute.

We use fresh spinach instead of lettuce on the kids sandwiches.

Granted, they don't get much, but it's better than nothing.
