Sure made me do some thinking about intolerances and allergies to wheat. The story was about the hybriding of Wheat to make it more weather resistant in the US. It seems that wheat was hybrid with Grass in order to make it sturdier. Consequently, we now have spiky or spinney wheat when looked at under a microscope. Interesting do you realize that this now means that anyone with a grass allergy would automatically be sensitive to wheat. Apparently, the European wheat does not have this problem and so most of their people do not have problems to wheat or gluten as we do....how dumb can we get. We do! There is another aspects: one of the first things to do in any inflammatory or gut issue if to remove wheat and dairy (possibly also corn in the USA)..not necessarily because of allergic reactions but because our mechanisms can't take the high load of them...all in moderation is a good maxim..when there is a strong system!
