To determine this you need, I think, to take a few foods, ask the software for a comprehensive nutrient analysis for each, and then do the work by hand from the USDA data and make sure they agree. At least one well known nutrient tracking program (NOT Walford's) yields two quite different sets of numbers for exactly the same quantity of exactly the same food, in two different parts of their website. Difficult to know which is correct. If either. Of course the USDA data is far from being complete and totally accurate. Last time I checked, it thought kale contained zero vitamin K. The reason is that no one has submitted a number for kale for that nutrient, so it is assumed to contain none. In fact it is probably the best of all sources. Also, for potatoes, as an example, they have a single set of data for units of potatoes measured in both grams and cups. But, based on the amounts of grams and cups indicated, potatoes ought to float quite high in the water. So to which of the two quantities do the nutrient data refer? Again, if either. I informed them about this a long time ago, and last time I looked the error had not been rectified. They did not even acknowledge to my email. If anyone knows of a species of potato that floats, please tell us about it.
