Use of coconut flour for CSID (enzyme deficiency)

I am wondering if anyone in this group is familiar with CSID or the

Specific Carbohydrate Diet? I have been using almond flour as a flour

substitute for over 3 years, and just came across the coconut flour

cook book. I have been using coconut oil to cook with as well. I

cannot believe how wonderful this food tastes! I made crepes and drop

buscuits today-- yum!

Anyway, the CSID is a rare (for now) digestive disorder where the

body does not have sufficient enzymes to digest complex sugars or

starches. Two of my children have been diagnosed, and fortunately

they can have almond flour. However, most of the kids with CSID

cannot. Because of the limited information available about CSID, I

have started making a cookbook to help parents with recipes. I wanted

to use the almond flour recipes, but they would only work for certain

kids. Now, I can use coconut flour for those kids!

If anyone else has used coconut flour successfully for a long period

of time, I would love to get your feedback on which recipes would

work great for kids.

, the candidiasis group has many members who failed to cure their

bowel disorders using the SCD but did fine by simply low-carbing and

using inulin and whey, which are both discouraged by SCD zealots. The

SCD is a nice pleasant thought but it's incorrect; low-carbing works

where eating the SCD-allowed sugars and starches does not!
