Balch, CNC, and see that a great many vegetables contain some form of Vitamin B. (Broccoli, for example contains B6, B2 (riboflavin), B3 (niacin), B1 (thiamine), and, of course, many other things.) A great many vegetables also contain A and C. This book gives a detailed description of vitamins, minerals, and other nutrients for each vegetable - as well as info on all food groups. According to Balch, Beets contain " calcium, iron, magnesium, phosphorus, potassium, sodium, zinc, copper, manganese, vitamin C, vitamin B1 (thiamine), vitamin B2 (riboflavin), vitamin B3 (niacin), pantothenic acid, vitamin B6 (folate), and small amounts of lipids and amino acids...Phytochemicals include beta-carotene, lutein, and zeaxanthin.) (P. 88.) Radishes also have many good things to offer - like so many veggies the list of good things is lengthy. B vitamins in radishes include: B1 (thiamine), B6, B2 (riboflavin), B3 (niacin.) (P. 81) Tomatoes, apparently contain many vital nutrients (Balch provides a long list again), including the following B vitamins: B6, B1 (thiamine), B2 (riboflavin), B3 (niacin). (p. 97.) Sweet potatoes are among the most nutritious of the vegetables. They do provide fiber, all of the B vitamins that are mentioned above, and many other good things. Hope this helps.
