Hi,

There is hidden gluten in many food items. If you attempt a gluten free diet, it must be totally gluten free. Even the smallest hint of gluten can undo all the work you have put in to staying gluten free. There is gluten even in some of the envelopes and the gule which people lick to seal. Gluten is hidden in foods, by stating it as modified food starches. Modified food starch can be made from anything, potato, wheat, rice....

Also what appears to be just Ketchup, can have vinegar which is made from vinegar distilled from wheat products. Soy sauce is mostly made with wheat, as is caramel color. Gluten free diets are tricky, and if not done correctly, might as well not be done at all. My husband has been on a gluten free diet for his MS for about 4 1/2 years. Though he hasn't improved, he has noticed that there is much less stress on his body. He has told me that he will only eat gluten free, he has never been in a rehab hospital since doing the diet, attacks he feels have been much less intense while on the diet. I also suggest going slow on it, because if you stress over it, that too is not healthy. ~ JANICE ~
