At the and of the day it is your own experience that tells you whether skipping a type of food helps you or not. However, ELISA tests give you a good guess what foods to experiment with. If someone has a candida (yeast) infection and starts a sugar free diet, there is a temporary worsening of symptoms due to the death of the candida. This usually last for 2-3 days and causes headaches, muscle aches etc. My opinion is that a lot of MSers have candida infections and that is why a sugar and gluten free diet helps them. This view is reinforced by these findings: " Because of the frequent association of Candidiasis (yeast overgrowth) with various autoimmune diseases like Multiple sclerosis, we examined 10 adult MS patients for the presence of specific antibodies directed against Candida albicans as an indicator of infection or overgrowth of this specific form of yeast. Our results, published in this journal (Townsend Letter for Doctors 148: 48-50, 1995) indicated elevated levels of immunoglobulin (one of the body's immune proteins) against Candida, or Candida immune complexes (immunoglobulin bound to Candida) in 7 of the 10 patients evaluated.
