Guest guest Posted July 9, 2004 Report Share Posted July 9, 2004 Hi All, Before I give the rough recipe for this, I want to say that necessity is the mother of invention and out of overenthusiasm and just not realizing how much the lentils would expand when sprouted, I ended up with more lentil sprouts than any one person can eat, and had to find new ways to use them. I discovered that a handful of lentil sprouts can be thrown into so many things, and the neat thing is even if cooking them kills the enzymes, they still have a kind of crunchy nutty quality that is a nice addition. I'll bet it would even be good to add some to the crunchy taco filling, after it has all been blended, without blending the sprouts so they retain their crunchiness. I guess they're fairly high in B-vitamins. Anyways, here's something I whipped up for dinner that turned out fabulous -- a conglomeration of diverse spaghetti squash recipes I found on the net, with some lentil sprouts thrown in ! :-] Spaghetti Squash Bake -- Pierce a spaghetti squash through a few times with a knife and bake at 350 degree on a cookie sheet for an hour or an hour and a quarter till tender when pierced with a fork. Sautee in a little olive oi: 1 chopped onion ( large ) 1 bell pepper ( in this case green ) a handful of dried mushrooms about a fifth of a large bunch of parsley chopped fine about 3/4 cup of lentil sprouts 5 cloves of crushed garlic some rosemary and thyme to taste ( i always err on the side of More spice rather than less but others may differ ) salt and pepper and a little cayenne to taste stir in and heat: approx a cup or a cup and a half of tomato sauce and stewed tomatoes seasoned with a little garlic and rosemary to taste, salt and pepper to taste ( i used a can of tomato sauce and threw in some chopped tomatos and simmer until they were stewed ) scoop the seeds out of the squash and spoon the squash into the mixture, stir it all up, and put it in an oiled rectangular pyrex baking dish ( large size ) top with about a cup of grated mozzerella and bake at 350 deg for half an hour yum -- i suppose it would be good with a little paresan, but i didn't have any on-hand, so, Peace, Cathie Quote Link to comment Share on other sites More sharing options...
