I slice the sweet potatoes into medallions...

about 1/2 to 3/4 inch thick...

heat a fry pan...put some coconut oil in it...a teaspoon or so...

and let them cook on medium ~ med low heat...with a lid on...

then after about 7 mins or so...lift the lid see how they are doing...

and if cooking to be brown on the pan side I flip them over...

and let them go again for 8 mins or so with the lid on...

and check them...I found that they tend to caramelize a bit if the heat is right

then i put them on a plate with a little butter on them...tastes great...

also a bit of soy sauce can be good too...

enjoy...they are a great source of fiber - I leave the skins on...

My oil was finally delivered right after I sent the email to the group.

They

explained that they were relocating and their communication was not

working.I didn't know that so had no idea what was happening because of the

shortage of oil everywhere.

Only thing now is, they sent me the last that they had in stock and 3 out of

the 5 gal have expiration dates starting this month of may, then august and

November of this year. I couldn't possibly use all this oil in that short of

a time.

I know that CO does has a pretty long shelf life but when it says that it's

BEST BY a certain date does that mean that it loses flavor but the nutrients

are still intact, or both begin to degrade?

I've never heard of them myself. I think Paypal can do something for you if

you

call them. They can get in touch with the vendor or give you information.

Paypal

is like any other credit card. They guarantee your purchase. I had something

like this happen to me and I got my credit card involved and they got my

money

back.

Thanks for this recipe. I printed it out and want to try it today.

Only problem is that I find the sweet potato rock hard and very hard to cut

in half let alone several slices. Do you have an easy way to do this?

I do not have too much difficulty using a paring knife...

if I were having difficulty, I guess i would use a bigger chef-type knife and

put the sharp edge on the potatoe and hit it with my other hand to help it

through the flesh of the potato...just hoping we are talking about the same

thing...

ours here have orange flesh and a diameter of 2 ~ 3 inches and sometimes a

length of

6 or so inches...
