Guest guest Posted May 12, 2011 Report Share Posted May 12, 2011 I slice the sweet potatoes into medallions... about 1/2 to 3/4 inch thick... heat a fry pan...put some coconut oil in it...a teaspoon or so... and let them cook on medium ~ med low heat...with a lid on... then after about 7 mins or so...lift the lid see how they are doing... and if cooking to be brown on the pan side I flip them over... and let them go again for 8 mins or so with the lid on... and check them...I found that they tend to caramelize a bit if the heat is right then i put them on a plate with a little butter on them...tastes great... also a bit of soy sauce can be good too... enjoy...they are a great source of fiber - I leave the skins on... d From: s.l-c.o <s.l-c.o@...> Subject: Re: Pure Healing Foods *UPDATE* Coconut Oil Date: Tuesday, May 10, 2011, 5:30 PM Â My oil was finally delivered right after I sent the email to the group. I know that CO does has a pretty long shelf life but when it says that it's BEST BY a certain date does that mean that it loses flavor but the nutrients are still intact, or both begin to degrade? Only problem is that I find the sweet potato rock hard and very hard to cut in half let alone several slices. Do you have an easy way to do this?
