Guest guest Posted June 30, 2004 Report Share Posted June 30, 2004 I tried one last night called "Eggplant Steaks" Dredge the eggplant slices in flour, ( 1 eggplant peeld and cut in 1/4 in slices) then in a mixture of eggs and water, (3-4 eggs in one cup water, 1tsp salt, and the recipe called for Thyme which I didn't have so used Rosemary) after dipping in egg you're supposed to dredge it in a mixture of ww. breadcrumbs, wheat germ and sesame seeds, but I didn't have sesame seeds or wheat germ and DID have lots of lentil sprouts i needed to use so I chopped them very fine and used bread crumbs ( 2 cups ) and about 2 cups of diced lentil sprouts. sautee in oil till golden on each side then cover with tomato sauce. it was pretty good actually ! ;-) Quote Link to comment Share on other sites More sharing options...
