I spent two months last winter in the Dominican

Republic. I lived in a remote fishing village and ate

all native food (garden v egetables and rice, mostly).

I also drank alot of liquid from coconuts. They are

free - lying on the beach - or pay a native 30 cents

and he will scale a tree, get the coconut, use a

machete to open it for you and even cut the inside

flesh out with his machete. I made coconut milk from

the coconut then used it in making rice dishes. I

also ate on a daily basis coconut bread which is baked

by natives on the beach. I knew nothing about the

healing qualities of coconut milk while I was there.

But, what I did know is that I put on five pounds in

two months. I was very under weight and wasting away.

And that is my experience with coconuts!

Coconut Milk

Does coconut milk have the same antiviral/antibacterial properties as some of

the other coconut products (i.e. cold-pressed coconut oil)? Can anyone tell

me how coconut milk is made? Is it heated, and therefore potentially

denatured, or is it cold-pressed? Thanks.

I was watching a cooking program and they said on there that the liquid in the

coconut isn't the milk. This lady said that is the coconut water and the

coconut milk is made by a process of using the white coconut flesh, cooking and

then straining it.

It kind of blew me away because I had always thought the coconut water was the

milk. That is what my dad always called it.

I found it at Wally world. Can't wait to experiment. Got me aq fresh coconut

also and am now beating it to death to try and get some coconut out of it!!!

Hi all:

Does anybody have any more specific info regarding coconut milk and

oil and how it affects us O's? I was really getting into using it in

curry dishes but wasn't feeling too great. Then I started thinking

about the D'adamo -lectin theory and looked at what I was eating from

the " avoid " list (:coconut milk, avocado, peanuts). So, as hard as it

is to cut out these foods (plus, I'm trying to gain weight), I've

stopped eating coconut and peanuts, and seem to be feeling better.

And my GI tract seems to be functioning better too (if you know what

I mean)..

Any comments appreciated!

Hi ,

We have purchased the no leaching or dissolving type of Tetra pack, this is

an acid resistant, dissolve resistant tetra pack, the most expensive

available. The plastic is an HDPE which many of us use, this is the liner.

So you have plastic on both sides of Aluminum, then the milk carton material

on the outside, it is very high quality. Now many people will drink out of

cans or pouches which carry Aluminum and are probably much cheaper than this

Tetra Pack. Before we had a coconut milk in glass from Sri Lanka but all of

our products are coming from Indonesia now.

In the future we will make both available to our customers. Thank-you for

What is the shelf life of the tetra Pack coconut oil?I have gotten old canned

coconut oil that was almost solidified from a local oriental store.Im not sure

if it was from age or heat in shipping or what...

I spoke to Annette because we had originally been given a shelf life of 12

months three years ago but the product has always lasted longer. The shelf

life is actually 24 months. The canned coconut milk has a bigger chance of

having heavy metals in it. I can't wait for it to come, I've really missed

it.

According to the largest coconut oil importer in North America, Quality First

International, the shelf life of common VCO is about four months, after which

rancidity is detected. They are a huge importer of this product so they know

their work. This begs the question, how then can coconut milk last any longer

than that without refrigeration or irradiation? Cook it?

Duncan, our coconut milk is put through a flash cool process. We have been

doing this for 5 years and have found many that have been good for two years

although we put a 1-year shelf life on it.

Given Coconut oil has a low moisture content, the shelf life is 2-3 years,

it's considered a very shelf stable fat. Our moisture content on our

centrifuged coconut oil is 0.16%. Right now we are speaking of coconut milk.

Sooooooo...

Our coconut cream, milk and water undergo a form of pasteurization. It's

done through a flash cool process, heated to (158f) for 2 seconds, quickly

cooled to 39.2f) Refrigeration temperature. It is held there for 30 min.

quickly heated to (284f) for 4 seconds and quickly cooled to (86f) and

packaged at that temperature.

This coconut cream is approximately 24%

oil, which means that one 250 ml. tetra pack carton contains about 4

tablespoons of

This coconut milk is approximately 17%

oil, which means that one 250 ml. tetra pack carton contains about 2 1/2

oil. It is milk that people can drink right out of the carton and it has

become very popular. It is not often that you can find something that is so

healthy, yet tastes so good.

This coconut milk is smooth and creamy with a natural sweet coconut taste.

It is a little thicker than cow's milk or nut milks, but it can be used in

all milk applications. It is a wonderful base for smoothies. This milk can

be refrigerated without any separation of the oil from the milk. We find

this coconut milk superior to coconut milks that are bottled in cans.

Absolutely Roxana it seems a chilled centrifuged oil has a much longer shelf

life; more than three years without detectable rancidity. Quality First was

referring to VCO derived with more traditional processes, not

chilled-centrifuged. Rancidity is noticeable in many of these VCOs after about 4

months, resulting in a " catch in the throat " referred to by many users. QFI

indicates they have to sell this " ordinary " VCO in 3-4 months or it's junk.

OOps I meant to add that if the coconut milk has been pasteurized it will store

better of course than if it's fresh. The canned coconut milk I buy at the store

is about 19% oil.

Duncan,

That makes better sense but you see our oils are not junky. So I didn't

understand initially why you were referring to such a short shelf life. Yes,

the catch In the throat generally denotes a higher free fatty acid profile

in the coconut oil therefore the oil is going rancid on you.

I hate to call this pasteurization because true pasteurization is different

than what we are doing. The flash cool process is an amazing process and it

makes the product available to all of us coconut milk lovers. When it comes

in I'll be happy to send you some for sampling. Let me know.

OOps I meant to add that if the coconut milk has been pasteurized it will

store better of course than if it's fresh. The canned coconut milk I buy at

the store is about 19% oil.

My husband makes excellent vco and no heat is applied nor is it " flash freeze "

treated.  His oil can last even 5 years, believe me. The trick in having good

oil is in

(1) controlling the moisture content.  Most producers add the coconut water or

plain water when they squeeze out the milk - cold press.  WE DON'T.  We use pure

coconut milk.  So there is not much water there.  Moisture is evident at the

bottom of the oil when it is present.  They appear as tiny clear bubbles and

should be taken out.

 

(2)  Then another point to consider is filtering.  If the oil is not filtered

thoroughly, then it will also go rancid quickly. Many people use  muslin cloth

to filter.  This is no good.  And one has to filter many many times until there

are no floaters in the oil at all.

We are speaking of Coconut milk though not Coconut oil. I agree with you

that when making Coconut oil from Coconut milk there is a much longer shelf

life as there is in Centrifuged coconut oil.
