For cooking I prefer deodorized oil. It is very nutritious and has lots of those healthy medium chain fatty acids that mother's milk is also rich in. The goat's whey protein is much easier to digest and I have found that babies really love it. Apparently, it's the closest thing to breast milk and raw would retain all the enzymes that pasteurization and homogenization kills. It's full of goodness. You can either put water in the powder to make it milky, and add it at trace, or you can just add the powder at trace. I have had coconut milk turn tan when I've added it earlier, so there is that possibility. I prefer to make it liquidy and add it at trace, with my essential oils. Rinse the grains to get rid of the milk curd or milk residue before you put them to the coconut milk. Brew as you would for milk. Following are some differences and similarities between the two forms of CW: CW from mature nuts has more contents of carbs, protein, fats. While CW from young/tender nuts with higher sucrose, vitamin C, but similar contents of reducing sugars (fructose and glucose). The mineral nutrients esp the ionic or electrolyte components K, Ca, Mg, Na,S,P and Cl of the two forms of CW similar or almost the same. The fact is the main ionic contents of K is balanced by the high levels of chloride ions and this natural and unique to coconut water. Hoping, this posting make sense to you.
