The short answer Craig to whether you should be concerned about reading or

changing your cholesterol level is NO.

Oxidative stress is the reading to watch because in absence of oxidative stress

there is no heart disease, no plaque and very little inflammation. This was

readily seen in prehistoric cultures in which up to 75% of the calories came

from saturated fat, the longer chains of which elevate cholesterol.

If the inflammation is caused by rancid fat, look to the polyunsaturates,

particularly excess omega-6, but " excess " omega-3 can cause it too. The main fat

in butter, oleic acid, is the body's main fuel and as a monounsaturate it needs

less protection.
