Yes naturally occuring. It was a comment on one of the . Of course

not this board. I am jsut trying to fact check the comment.

Hi !

Someone inquired about the iodine value of coconut several months ago. I

understand the iodine value is not the content of iodine in coconut but the

number of grams of iodine that will react with 100 g of coconut oil (CNO) under

standard conditions. It is a measure of the degree of saturation (carbon atoms

linked to hydrogen atoms) of an oil. For coconut oil, it is usually within the

range of 7.5 to 10.5. It is an index of the drying and polymerizing properties

of oils.

Therefore coconut oil is highly saturated (IV= 10, low value ) while soybean

oil, canola/rapeseed, olive oil, corn oil  , safflower oil, peanut oil with

high IVs (80 -145).  considered highly unsaturated. It is now known that

monounsaturated or polyunsaturated plant oils are not stable oils thus the

tendency to be produce trans fatty acids upon subjected to heat (unhealthy,

causes oxidation of body tissues/cells).
