Just read some stuff on the two different *types* of beta-casein... There are two types: A and B Type B is the good (original/heirloom) version, and type A is the bad (new/modified) version. Most modern farms have cows that produce milk with the type A protein. Jersey, Asian and African cows are primarily A2, and Holsteins ( which comprise the vast majority of American dairy cows) are primarily A1, although Holsteins can be bred over time to be A2. It takes many years, however. The main difference is that A2 milk contains the amino acid proline and A1 milk contains mutated proline in the form of histidine. Proline has a strong affinity for BCM-7, an opiate which can cause many of the problems associated with A1 milk. Proline keeps the BCM-7 out of the A2 milk.
