How do I tell if coconut oil is spoiled

Summer of 2008 I was blessed with two 5 gal pails of coconut oil. This

week I finally used up the first one which was centrifuged and opened

the one that is soon to be 3 years old. It's been stored as received in

a room with no light; temperature does not vary frequently but in winter

may get to 50ºF and in summer 75ºF.

The Centrifuged one was very white with faint coconut odor. This one

says it's " expeller expressed certified organic " and is a cream /off

white color with zero odor. It also was layered---the top 1.5-2 inches

is a different color/texture than what's below it. It's softer and more

translucent. Perhaps this is the part of the oil that became liquid in

a heat wave or something.

My nose is pretty good and I cannot smell a thing in this " new " pail. I

know that may not be a good measure of whether the oil is fit to use but

most oils stink when they're rancid.

Anyone have any experience who can help me?

God forbid it's spoiled, but should it be, what's the best use of ruined

for ingestion coconut oil?
