Just read some stuff on the two different *types* of beta-casein...

There are two types: A and B

Type B is the good (original/heirloom) version, and type A is the bad

(new/modified) version.

Most modern farms have cows that produce milk with the type A protein.

Jersey cows produce mostly type B, but the best milk with NO type A

proteins comes from Zuma cows...
