Guest guest Posted June 27, 2004 Report Share Posted June 27, 2004 My Grandma loved to make this for my Serbian Grandpa ( I think this one is Greek, also ), and I suspect she would say to use white onions, but Grandma always admonished me against following the recipe too closely. Some gorgeous tomatoes in season and some nice purple onions plust rosemary in my garden, led to this version which is delicious: Cut up some tomatoes ( lets say about two medium sized ) (( dice them but not too small -- into good medium sized chunks )) Slice Purple Onions into half ringlets. If it's a really huge onion, half the halves. (( for two tomatoes, I'd say approx 1/4 of a large purple onion Use the scissors if you like to snip a sprig of fresh rosemary into the tomatoes and onions. Drizzle with a little Olive Oil. Splash some Lemon Juice over the top. Salt and Pepper to taste. Stir, eat and be sure to drink the delicious juice at the bottom of the bowl which has a lot of tomato in it!
