If you are going to use fresh it might be better to blenderize it with the oil and then allow it to infuse. Just make sure you remove any trapped air (of course you know this). Using dry or fresh herbs is mainly a matter of choice. Some people prefer to use fresh and others dry. I am using mainly fresh for my infusions but that is because I can get all of my herbs fresh just by going out and collecting them in the hills and meadows. While I was living in Arid-zona I had to use dried because very little grows there (known herbs). Thought the water content of this herb fresh might be too high to get a good oil infusion. I think I will try it both ways and see what happens. lol! I have a lot of fresh herbs here for the picking too and feel so blessed for that. I have fresh horsetail all over right now. Or did you just pack the jar and add olive oil? You do realize that you will need more fresh herbs to get the same results from less dried herbs. Maybe three times as much. I guess I never really viewed plantain as being a really watery herb. Good for you on trying your hand at it.
