Well right off the top of my head why don't you dehydrate them and

powder them up. Add it to your juices or in a salt substitute. Got to be

good for you no matter how you use them.

I recall reading somewhere that carrot tops are

closely related to parsley (which makes sense looking

at them, and also looking at parsley's roots, which is

largely a taproot...)

Hi Doug,

I've heard the carrot greens are actually toxic from some juicing

sources, but it didn't mention the toxic element.

This source below list them as 'mildly toxic':

I just glanced through the lists and there are several very nutritious foods in

bother lightly toxic and toxic categories.

Anyway I had a good feed of carrot top green night before last and never had any

symptoms of anything. They were delicious.
