Couldn't find any info on sunflower sprouts that I could comprehend (LOL!) on the Internet and in the books I looked through earlier...until...I came across what Elson M. Haas, M.D. says in _Staying Healthy with Nutrition_. Thought I would share the findings: Re: growing sunflower sprouts with stems and leaves, it seems the seeds with the shells are used: " Sunflower, wheat berry, and buckwheat sprouts all tend to grow better and healthier in a bed of soil. They are placed on top of the soil, watered well, covered with dark plastic or cloth, and left in a dark place for two to three days. Then they are uncovered and placed in the light, being watered or sprayed as needed. The tall shoots with green tops can be trimmed and eaten fresh in salads or they may continue to grow even further. " (P. 320.) Re: 'soaked' sunflower seeds (using raw, shelled seeds): " If sunflower seeds are soaked overnight, it makes them more digestible and alkaline-forming. " (P. 331.)
