Shari, I never used vanilla bean after all these years. So I buy this stick, now what? Have you tried another nut as these macs have gone off the wall in pricing? Or how about 1/2 cashews and 1/2 mac or??????? Any sub for agave? Just love many options so saved someone from asking the question. Thanks. Shari's recipe is below all. Well, Carol.......cut the vanilla bean in half crosswise. Put the entire thing in the VitaMix with the other ingredients and whirl until everything is completely liquified.

Yes, I have tried other nuts and No, they don't work. That's why I wrote the recipe with macadamia nuts. They are full of fat and sweet and white.

Yes, I have tried dates for other sweetener and No, it doesn't work. That's why I wrote the recipe with agave. They never fully disintegrate in the VM and leave little flaky things (skins) in the batter and in the crepe and I don't like that in my pretty white crepe.

I don't put out recipes that I have not made or that are difficult to master without demonstration. This one is pretty easy IF you follow the directions and the proportions. The only tricky thing is being brave enough to make them thin enough on the the teflex sheet. I make them about saucer size and quite thin, but very uniform in thickness. That's why it doesn't take long to dry enough for dessert. Of course on a day like today when it is POURING BUCKETS of rain and the humidity is very high, it will take a bit longer to dry. That's why I said you have to monitor these babies.

Shari, Thanks bunches for clarification. I do post recipes that I don't always try but think they are easy enough for others to play with. Still eating those Boutenko raw pickles.
