Guess I didn't know what cannoli was! I have a recipe for the wrap part that I made up. I call them................

MAC DADDY PANCAKES

1 cup macadamia nuts

1 cup young coconut meat

½ vanilla bean

¼ cup agave nectar

¼ cup coconut water

Blend thoroughly and spread thin on Teflex sheets. Dehydrate for about 2 hours and check. Turn if possible. DO NOT let them get crispy! Pay attention.

Thanks Shari. Your crepe looks great and a winner for sure. Maybe it's the filling I am drooling over. Think it can be a MAC/Cashew or just shew with a vanilla bean or liquid flavor?
