Unlike most soups, it is served cold which makes it is perfect for the raw food conversion. This gazpacho soup recipe is incredibly easy to make and very healthy. This particular recipe is very popular at the Memphis raw food support group potlucks. Raw Gazpacho Soup You will need: 4 cups total of freshly squeezed vegetable and fruit juice: 1½ cups of tomato juice, 1 cup of carrot juice, ½ cup of cucumber juice, ½ cup celery juice and ½ cup of lemon juice. Collect all the juice in a bowl and set aside. You will also need: 1 teaspoon of raw honey, dissolved in the juice. 1 cup red bell pepper, minced 1 medium cucumber, chopped 3 scallions, minced 2 cups tomatoes, freshly diced ¼ cup fresh parsley, chopped ¼ cup fresh basil, chopped 1 cup fresh corn kernels Dash of ground cumin Celtic salt and Cayenne pepper to taste. Dissolve the honey in the bowl containing all the juices. Then add the rest of the ingredients. Suzi What is a weed?
