This is similar to what we had. 1 handful of small beets, scrubbed, not peeled, sliced 1/2 onion, chopped 1/3 small cabbage, chopped 1 handful dried summer squash 1 handful dried tomatoes 1 teaspoon whole black pepper 1 bay leaf water to cover generously Simmer all until barely done. If you use stock instead of water, you will not need any salt or other flavor-enhancer. If not, you might want to use a little salt or soy, or whatever you use. Part of the charm of remembrance of this soup is biting down on a peppercorn. If that idea doesn't make it with you, use ground pepper.
