Guest guest Posted November 16, 2008 Report Share Posted November 16, 2008 I love SIMPLE recipes. What could be easier than a Christmas Cake that only uses THREE ingredients? This was on a TV programme in OZ yesterday: Christmas Cake - Saturday 15 November 2008 by Belinda Burrows 3 Ingredient Fruit Cake 750 grams dried fruit mix 600ml chocolate milk 2 cups SR Flour 1. In a bowl combine the dried fruit mix and the chocolate milk. Allow to stand overnight in the refrigerator. 2. The following day: Pre heat oven to 180c. Line a 20cm spring form tin with silicon or baking paper (base and sides). 3. Mix through the SR flour into the fruit/chocolate milk mix and stir until combined. 4. Spoon fruit cake mixture into the lined cake tin and smooth the top. 5. Place the cake in the oven and cook for approximately 1 hour and 15 minutes, or until a skewer, when inserted, comes out clean. 6. Is it a brand name, or is it like cake flour (which has other ingredients in it besides flour). Fruit cake is kind of a joke around here. Supposedly there are only 2 or 3 in existence, and they just get moved around from one person to another, because nobody eats them! I think when people use plain flour in a recipe, they usually add something like bi-carb, to make it like self raising. Maybe someone else can explain it better for you :-). I dont think it will taste too chocolatey, I think the fruit taste will take over. Seeing as its a simple recipe, I might also add a bit of brandy essence. But I want to stay as close to the original recipe as I can for the first one, to see what it tastes like myself. Then, if I make another one, I might add the grated zest of an orange and a lemon. Self-rising all-purpose flour (one cup) 1 cup all purpose flour, plus 1 1/4 teaspoons baking powder and a pinch of salt. Self-rising cake flour (one cup) 1 cup cake flour with 1-1/4 teaspoons baking powder and a pinch of salt. Generally I scratch open a box of something, add eggs or whateer, and go from there. So SR could be a brand name, it could be self rising, it could been Sir Reginald of the Round table.
