Hi Anne, Kefir will definitely get the good bacteria back in your colon, it did it for me. I don't make Kefir, it's available here where I live in LA from raw goat milk or pasteurized. Click on those links, it will tell you pretty much everything. Yes you can make it from coconut milk. I have a question, why is it that you can't use real milk? Are you lactose intolerant? People who are lactose intolerant tolerate goat milk very well. Also, yes it is very simple to use. I've never made it so I'm not sure how but I've made Kombucha tea and that was pretty simple.
