In response to the above, I refer you to the website " World's

Healtiest Foods " which describes some of benefits of beets.

For myself, I like to diversify my intake of fruits and vegetables

over a wide spectrum of colors in order to obtain each color's unique

health properties.

Beets fit perfectly into this color mixture with its unique color.

One way to enjoy beets is to have a mixed vegetable juice each

morning. I get a local brand here in Estonia that is similar to V-8

in the US.

It consists of tomato, beet, carrot, onion, parsley, dill and celery

juice or extracts, and with no salt or sugar.

I heat up a cup of it in the microwave to release the lycopene in the

tomato, and then add a teaspoon of turmeric and garlic powder, and a

few shakes each of oregano, rosemary, basil, black pepper, and a few

other spices. Since lycopene needs some fat to be absorbed, I add a

touch of extra virgin olive oil at the very end. (You can check out

This has to be the healthiest breakfast drink possible. It is very

filling, and doesn't taste all that bad. And it sure beats possible

chemeotherapy 20 years from now.
