Americans are dying like flies from EVERYTHING. We've fallen to the 29th-37th (depending on what statistics are used) healthiest country in the world. The topic of fat is just one of many issues affecting this, and it is indeed a hugely multi-faceted disease epidemic. America is enduring a holocaust of cancer, heart disease, diabetes and chronic disease. The annual 600,000+ cholecystectomies in the US alone is just one grim signpost along the road to oblivion for our country. REGARDING FAT INTAKE, as Dave sez, it's more about the types of fats we eat as well as the the quality of the fat being eaten. It has virtually nothing to do with excess quantity as you state. The satiety levels of both natural (not man-made) protein and natural fat shut off one's ability to over-consume them. Yet, Americans are saturated with TRANS fats and, thanks to the huge vegetable oil cartels such as Cargill, we are innundated with nasty vegetable fats to the extent that our ratio of essential fatty acids, Omega 6:Omega 3 has reached the shocking ratio of 25:1 in spite of the fact that traditional cultures are around 1:1 or 2:1. These outrageous levels of Omega 6 create the inflammatory prostaglandin cascades which are the root of almost every inflammatory disease, not the least of which is cholecystiasis. The argument about fat is far, far too time consuming to debate in this format but I will wager you that the modern fat-phobic nutritionists such as Pritikin and Ornish (and now Weil has been bought) will soon be shown to be the " fad " foodists that they really are. (See the staggering " Nutrition and Physical Degeneration " by Weston A. Price) ---If you read truly scientific epidemiologists from the 1930's such as Price, Pottenger and others you would see why I know the full fat diet to be the only true path to health and happiness. Incidentally, I DO lust for fatty foods. It's natural to do so too! Here's a handful of concepts to ponder.... ~~Before 1920 coronary heart disease was rare in America, so rare that when Dr White introduced the German EKG machine to his collegues at Harvard they laughed and advised him to switch to a more profitable form of medicine. He searched for years for a patient with clogged arteries. Today it causes 40% of the deaths in America. ~~From 1910-1970 traditional animal fat consumption dropped from 83% to 62% with butter going from 18# a year to 4#. During the same period consumption of vegetable oils in the form of margerine, shortening and refined oils increased 400% and sugar and processed foods increased by 60%. Americans today consume an average of 57 teaspoons of sugar a day (2/3 hidden in food). (See Sally Fallon's " Nourishing Traditions " for a real eye opening) ~~The Japanese, who have the longest life span of any nation eat very little dairy fat so some assume it is a low fat diet. Careful analysis shows their cholesterol intake to be HIGHER than Americans. This is due to moderate amounts of eggs, pork, chicken, beef, seafood, shellfish and organ meats. What they don't eat is much vegetable oil, white flour or processed food (white rice consumption and junk food intake is now increasing, of course and the death rates are rising accordingly). ~~The Swiss live almost as long as the Japanese, and tied for third are Austria and Greece, all of whom live on the fattiest diets in the world! ~~Ever been to France? They low fat gurus here refer to their heart attack rate (1/3 that of the US) as the " French Paradox " because it screws up their faulty studies. ~~The Framingham study (of which I am one of 500,000 subjects) had been widely touted as corroborating evidence for the hideously flawed Lipid Hypothesis. Then, after 40 years of study, the director states (direct quote) " The more saturated fat one ate, the more cholesterol one ate, the more calories one ate, the lower the person's serum cholesterol...we found that the people who ate the most cholesterol, ate the most saturated fat, ate the most calories, weighed the least and were the most physically active " . (See Al 's " 21 Days to a Healthier Heart " for a full analysis) Recent studies that completely debunk Ancel Keys beloved Lipid Hypothesis of cardiovascular disease have been squelched by the medical and processed food industry (and their government lackeys). Keys tracked 22 countries and published results only from the 7 countries who's dots lined up on a graph. His studies are crap. (See The Cholesterol Myths, Uffe Ravnskov for the complete destruction of Keys work). This list could go on and on for page after page. It's irrefutable that the American " Diet Dictocrats " have created a completely BOGUS MYTH about fat consumption. Government " health " officials trot out a new pyramid every few years (funny how their " truths " change?!) and university research hacks churn out boxcar loads of bogus research, all FUNDED by the powerful grain cartels, the vegetable oil producers and the massive food processing industry. The medical industry, now turned in to soulless hacks, survive by preying cannibalistically on the flesh of their victims, I mean, patients. Me and you! The pharmaceutical industry is the second largest industry in the world! Sadly, the faddist Diet Dictocrats and the Politically Correct Nutritionists don't even need to sell you on their " cooked book " research themselve, they have fleets and squadrons of Junior Leaguer lay people regurgitating their sick, obsolete and dead wrong advice in self-published books, websites, and, yes, even discussion groups. People who are STILL perpetuating the Lipid Hypothesis ---and the Low Fat Diet Model--- have to have their heads buried in the sand for at least 15 years. Virtually every single gall bladder patient is a victim of this horrible nutritional advice. It's time to get back to reality. It's time to get back to real food, real exercise, real stress levels, and to work together for a cleaner environment. Throw the bastards out of office (start with DR " BLIND TRUST " FRIST!) If you wait for The Government, Corporate America or any other Big Brother to do it for you, well, have a nice funeral.
