I was talking to a friend who gave me an idea that I modified into something I think is extraordinary!! Use a cupcake pan (mine has 6 holes, if yours has 12 holes use 12 eggs) 1) Separate 6 or 12 eggs 2) Beat the egg white to fluffy peaks 3) Beat the yolks separately 4) Cut assortment of veggies and meat (which ever you like. I picked green onion, red pepper, mushrooms and ham) 5) Fold the yolks into the whites (you can omit if you like a lower fat version) 6) Fold all your cut veggies and meat into the egg mixture 7) Finally, fold the shredded cheese of your choice into the mixture (you can omit for a lower fat option) 8) Make sure not to stir too hard or you will lose all the air you beat into the whites 9) Once everything is stirred in, scoop the mixture into the cupcake pan that has been sprayed with PAM. 10) Put into a preheated 350 oven and let bake for about 20-30 minutes. I did not time, I just kept my eye close and took them out when a knife came clean. These easily pop out of the cupcake pan and were so tasty. They were like a light airy quiche without the crust. You can eat one or two for breakfast or a quick snack and keep the others in the fridge for a quick breakfast on your way out the door to work. I have never been able to eat eggs since my surgery. For some reason the texture and consistency never agreed to me and I would always throw up. However, the air that is in these changes the texture enough to where I was able to eat them, enjoy them and want more and more. I was able to prepare these in just a few minutes and they baked while I cleaned up and did laundry. Very convenient. I am not suggesting you forego your fiber or any other nutrients for that matter. I am one of those people who does have a problem getting all my protein because I am not a lover of meat. And I am also one of those who usually skips breakfast becuase I am very rushed in the mornings. This is just a good and simple out the door food that you can prepare the night before or on the weekend that I wanted to share. In order to be successful at anything you have to have variety. This is easy to make and easy to eat in the car if you are on the run (cereal is not so car friendly). We all have our secrets to success and we all know what we do and do not lack in our diets. At least those of us who have been doing this for a while. So like I said, this is just an easy to prepare and eat food for an on the run snack or meal. Just for the record, I had my surgery almost 3 years ago. I got to my goal weight in less than a year and have maintained for almost 2 years after that. I am quite healthy with a BMI of 22 and body fat of 17%. So I think I must be doing something right! Quote Link to comment Share on other sites More sharing options...

I haven't found anything I can eat before 10am without irritating my band, which results in a day or two of clear liquids (blah). But I am very optimistic about these egg cups. I need " something " in the morning to get my metabolism going. I don't loose much weight when I starve my body for 15+ hours(9pm-noon). I also try to eat the Kashi Go Lean a couple of nights a week for a much needed fiber snack (evenings are the only time I can get it down...and only then if I let it soak up the milk). Anyway, Thanks for taking the time to post this. I will try them in the evening at first, and then gradually see how early in the morning I can eat them. 8-9am would be LOVELY!
