I usually add lots of spices. For chicken, I'll put on chili powder, garlic powder, and onion powder. I also make chili a lot. Its really quick and easy. I just cut up the chicken into chunks, add water, and a couple of cut up tomatos. I add some chili seasoning, and let it simmer. It's at least better than a plain, dry piece of meat! I lost 65 pounds about 3 years ago on it and it was easy then but for some reason I am having a hard time this time. Any suggestions on the veggies? Guest guest Posted September 30, 2011 Report Share Posted September 30, 2011 I got so bored in my first round that I was barely able to eat! Then I discovered making SOUPS. I make a big batch, using either chicken/chicken broth (no msg, low sodium, fat free), water, spices/fresh herbs, a bit of onion, a veggie (spinach or cabbage are my faves..or fire roasted tomatoes)...I also like to make a Thai Shrimp soup with cabbage, lemon grass, Bragg's amino acids, veggie broth, herbs, etc. Not only are the soups more filling, but they're more soothing to eat and tastier. I made a chicken meatball/spinach soup last night that was really nice. The other nice thing about it is that it takes about 30 minutes to make it, BUT it makes about five servings, so I can freeze individual portions and I end up with a nice " stock pile " of frozen meals to zap in the microwave! The other thing I discovered was ground bison. I brown it in a patty in a dry non-stick and once browned up nicely, I open a can of organic fire roasted tomatoes and pour over them and simmer until the bison burger is done. I only eat this once or twice a week, MAX, but it is sooooo delish! > > I am having a very hard time staying on the 500 calories.
