Thanks, Sheila As to the history of soaking grains for people in modern times,my path came from the Swiss Dr. Bircher-Benner who in his 1902 book the BIRCHER-BENNER Health Guide stated he developed his now famous meusli recipe based on soaked grains (either flaked or course ground), raw milk, fruit, and nuts when availible. (The grains were soaked in cold water over night) He first experienced this meal with a simple shepherd who invited him to dinner one day while he was walking high in the Alps. He was told the basic meal was consumed 2 times a day varrying with what was naturally available and had been this shepherds family's basic diet for generations. Local grain soaked and a finely grated apple became the basis of his famous dish which to this day can be ordered in ay resteraunt in Switzerland.
