If you want real pork take a trip to Tuscany and get the pork that they raise on wild grass and whatever else grows in the wild - those are the pigs that can find truffles - because they are raised in a natural environment and get more than 75% of their food by such foraging. As the farmers say - the fat from those is a whole other story compared to the garbage of lard in a commercial porkie. There was nothing nicer than a great spit-roast pig grown on free range grass when I lived in SA. That's a country of meat lovers and they know how to raise tasty stuff. So I am all for believing the scinetific stories of the badness of saturated fat - for the reason that unlike my father, I do not have my own cow on my own property, fed correctly. I buy cheap supermarket meat which is all I can afford. Well it is a choice of $2 or $3 a pound and eating enough or paying twice that and getting sicker becuae it's not enough protein. So for me - I remove the beef fat and use extra-virgin olive oil instead plus a fish oil supplement. And fish oil has too little mercury to worry about in proportion to the benefits and considering we can not get arachidonic acid, EPA or DHA omega-3 oils from anywhere else but fish oil. The fish LIVER oil (oil in the liver of fish) is a different story. The liver will concentrate toxins like mercury. The other thing to check is the source of the fish oil. Off ALaska is okay and from farmed fish is not, and from Norway is okay. And the smaller the fish the less toxin it had time to accumulate. Big fish like tuna is not the one to use for oil. I've seen this amazing young man give motivational speeches at the Crystal Cathedral and he is incredibly inspirational. He is very positive and upbeat and is so well received by all the audience, and particularly the young people. What a beaitiful film. Thanks for sharing this. .... Judy R.
